First up - what you’re going to need:

Burger Patties 90g — 2ea
Brioche Bun
 — 1ea
Butter
 —15gm
Tomato sliced
 — 3ea
Onion sliced
 — 3ea
Gem leaf
 —2ea
Cheddar or Blue
 — 1x25gea
Garlic Aioli
 —30gm
Tomato relish-sub
 —50gm
 

 

Now here’s the method to our madness:

1.
BURGER

Mix 6kg minced beef, 3kg minced veal, 2kg ox heart, 350ml tomato ketchup, 350ml mustard, and 100ml tabasco and 160ml Worcestershire sauce and mix together very well, season with pepper.

2.
BURGER RELISH:

 1kg red onion sliced cook until soft add 1 tbls of cinnamon, 4 No bay leaf.

 Add one 2.5KG chopped tin tomatoes, 300ml vinegar white wine, 500gm brown sugar, 300ml ketchup

Add seasoning and cook slowly for 2 to 3 hrs till reduced & thickened (be careful not to burn).

3.
COOKING METHOD:

Season 2 burger patties per portion.

Grill the burger patties for 2-3 minutes each side

 Place burger sauce on one of the grilled burger patties.

Then cheese on the other (Bacon if ordered) and finish in the oven

4.
SERVE:

Cut the burger bun in half, butter both sides fully and char-grill.

 2 x Baby gem leaf, 3 slices tomato, 3 onion rings on the base.

Relish pattie then Cheese one.

Cover with bun top and skewer with knife.

 Serve with Aioli (& Chips if ordered.)
